Oven-Roasted Cauliflower with Almond Butter Dressing recipe

This is a yummy dish with roasted cauliflower. It has a nutty dressing made with almond butter and a spicy crunch on top. You cook the cauliflower until it's a little brown and soft. Then you put the dressing and spicy bits on top to eat.

Ingredients

1 large head of Cauliflower
2 Tbsp Avocado Oil
1/2 Tsp Ground Cumin
1/2 Tsp Sea Salt
1/4 Tsp Black Pepper
3 Tbsp Almond Butter
1 Tbsp Maple Syrup
Juice from 1/2 a Lemon
1 Tbsp Water
1 Tsp Sesame Seeds
1 Tbsp Olive Oil
2 Cloves of Garlic, minced
1 Small Red Onion, thinly sliced
100 ml Sunflower Oil
1 Tbsp Tamari Sauce
15 g Red Pepper Flakes
1/2 Tsp Garlic Powder

Method

Preheat your oven to 220°C (428°F).

Cut the cauliflower into bite-sized florets and toss them with avocado oil, ground cumin, sea salt, and black pepper.

Spread the cauliflower florets on a baking sheet and roast for 25 minutes until they are golden and tender.

While the cauliflower is roasting, prepare the almond butter dressing by whisking together almond butter, maple syrup, lemon juice, and water until smooth. Adjust the consistency with more water if needed.

For the sesame chilli oil, heat sunflower oil in a small pan over medium heat. Add minced garlic and thinly sliced red onion, and cook until they are crispy and lightly browned, about 10 minutes.

Remove the pan from heat and stir in tamari sauce, red pepper flakes, and garlic powder. Let the mixture cool.

Once the cauliflower is roasted, transfer it to a serving dish.

Drizzle the almond butter dressing over the cauliflower.

Spoon the sesame chilli oil over the top, making sure to include the crispy garlic and onion bits.

Garnish with sesame seeds and serve warm.
