Oven-Baked Turmeric Tilapia with Green Beans & Spicy Sausage Sauce recipe

This is a fish dish with a twist! We bake tilapia with turmeric, then top it with green beans and a spicy sausage sauce. It's a yummy dinner that's a little bit fancy but still easy to make. You'll love the mix of flavors!

Ingredients

4 x 150 g Tilapia Fillets
2 Tbsp Turmeric
2 Tbsp Olive Oil
1 Tsp Salt
300 g Fresh Green Beans
1 Red Onion
100 g Spicy Italian Sausage
2 Tbsp Red Wine Vinegar
20 g Parsley
4 Tbsp Greek Yogurt
1 Pouch of Quinoa
1 Orange

Method

Preheat the oven to 220°C (428°F).

Place the tilapia fillets on a baking tray lined with parchment paper. Drizzle with 1 tablespoon of olive oil and sprinkle with turmeric and salt. Rub the spices into the fish.

Trim the ends off the green beans and cut the red onion into thin slices. Scatter the green beans and onion around the fish on the tray.

Bake in the preheated oven for 12 minutes or until the fish is cooked through and the vegetables are tender.

While the fish is baking, remove the casing from the sausage and crumble it into a hot pan over medium heat. Cook until browned and crispy, about 5 minutes.

Stir in the red wine vinegar and cook for an additional minute. Remove from heat.

Chop the parsley and mix it into the sausage mixture.

In a small bowl, combine the Greek yogurt with the zest of the orange. Cut the orange into wedges to serve with the meal.

Prepare the quinoa according to the package instructions.

Once the fish and vegetables are done, divide the quinoa among plates. Place a tilapia fillet on top of the quinoa, and spoon the green beans and onion alongside.

Dollop the orange-flavored Greek yogurt over the fish and spoon the spicy sausage sauce over the green beans.

Garnish with parsley and serve with an orange wedge.
