Oven-Baked Shrimp and Vegetables with Creamy Chipotle Sauce recipe

This is a yummy dish with shrimp and colorful veggies. We cook them in the oven on one big pan. Then we put a special spicy sauce on top. It's fun to eat with your hands using soft bread!

Ingredients

1 red bell pepper
1 orange bell pepper
1 tablespoon of fresh lemon juice
1/2 cup of sour cream
1 pound of raw peeled shrimp, fresh or frozen
1 large yellow onion
8 small corn tortillas
1 tablespoon of Cajun seasoning
2 tablespoons of extra virgin olive oil
1/2 teaspoon of salt
1 teaspoon of chipotle chili powder

Method

Preheat your oven to 450°F (230°C).

Wash and dry the bell peppers and lemon. Cut the peppers into thin strips and put them on a big baking sheet.

Peel the onion, cut it in half, and then slice it into thin pieces. Add it to the peppers on the baking sheet.

Pour olive oil over the veggies, sprinkle with salt, and mix them up. Spread them out flat on the baking sheet. Bake for about 5 minutes until they start to get soft.

If your shrimp are frozen, rinse them under cold water to thaw a bit and get rid of ice. Dry the shrimp with a towel.

Take the baking sheet out of the oven. Put the shrimp on top of the veggies. Sprinkle Cajun seasoning over everything. Mix it up and spread it out flat again.

Put the baking sheet back in the oven. Bake for another 5-7 minutes until the veggies are soft and the shrimp are cooked.

While the shrimp and veggies are cooking, squeeze the lemon juice into a bowl. Add sour cream and chipotle chili powder. Mix it to make a creamy chipotle sauce.

Warm up the corn tortillas in a pan, oven, or microwave.

When everything is cooked, put the tortillas on plates. Add shrimp and veggies on top. Drizzle with the creamy chipotle sauce. You can roll them up and eat with your hands. Enjoy!
