Oven-Baked Mozzarella Chicken with Spinach and Red Onions recipe


This is a yummy chicken dish with cheese, spinach, and red onions. You cook chicken in a pan and then bake it in the oven with cheese and veggies. It's a warm and cheesy meal for dinner.


4 boneless skinless chicken thighs (about 1.5 lb)
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
1 cup baby spinach leaves
1 small red onion, thinly sliced
1/2 cup sun-dried tomatoes, chopped
1/2 x 8 oz block mozzarella cheese, shredded
1/4 cup grated Parmesan cheese


Preheat your oven to 425°F (220°C).
In a small bowl, mix together oregano, basil, garlic powder, onion powder, salt, and black pepper.
Pat the chicken thighs dry with paper towels and rub both sides with the herb and spice mixture.
Heat olive oil in a large ovenproof skillet over medium heat. Add the chicken thighs and cook until golden brown, about 4 minutes per side.
Remove the chicken from the skillet and set aside. In the same skillet, add the sliced red onions and cook for 2 minutes until they start to soften.
Add the baby spinach and sun-dried tomatoes to the skillet with the onions and cook for another 2 minutes, until the spinach is wilted.
Place the chicken thighs back into the skillet on top of the vegetables.
Sprinkle the shredded mozzarella and grated Parmesan cheese over the chicken and vegetables.
Transfer the skillet to the preheated oven and bake for 15 minutes, or until the cheese is melted and bubbly and the chicken is cooked through.
Serve the baked mozzarella chicken hot from the oven, with extra Parmesan cheese if desired.
