Oven-Baked Cod with Mediterranean Vegetables and Citrus Salad recipe

This is a yummy fish dish with colorful veggies and a tangy salad. We bake cod with tomatoes, olives, and herbs. Then we mix greens with oranges and nuts. It's a healthy and bright meal!

Ingredients

4 (150 g each) cod fillets
2 tbsp extra virgin olive oil
1/2 tsp salt
1/4 tsp black pepper
1 cup cherry tomatoes, halved
1/4 cup black olives, pitted and sliced
1 tbsp fresh thyme leaves
2 tbsp fresh basil, chopped
1 (120 g) pkg mixed salad greens
2 oranges, peeled and segments cut out
1/4 cup walnuts, chopped
1 tbsp balsamic vinegar
1 tbsp honey
1/4 cup feta cheese, crumbled

Method

Preheat your oven to 400°F (200°C).

Place the cod fillets on a baking sheet lined with parchment paper.

Drizzle 1 tablespoon of olive oil over the cod, then sprinkle with 1/4 teaspoon of salt and 1/8 teaspoon of black pepper.

In a bowl, mix the cherry tomatoes, black olives, thyme, and basil with the remaining olive oil, salt, and pepper.

Scatter the tomato and olive mixture around the cod on the baking sheet.

Bake in the preheated oven for 20-25 minutes, or until the cod is cooked through and flakes easily with a fork.

While the cod is baking, prepare the salad by combining the mixed greens, orange segments, and walnuts in a large bowl.

In a small bowl, whisk together the balsamic vinegar and honey to make the dressing.

Pour the dressing over the salad and toss to coat.

Once the cod is done, remove from the oven and let it rest for a couple of minutes.

Serve the baked cod with the Mediterranean vegetable mix and a side of the citrus salad.

Top the salad with crumbled feta cheese before serving.
