Morning Glory (also called Kangkong or Water Spinach) is a beautiful leafy green that is used in many Asian cuisines. As such, it grows abundantly in tropical climates. It’s a powerhouse of goodness…rich in fibre, vitamin C, iron and many other essential phytonutrients.

Ingredients

1 tbsp extra virgin olive oil
1 bunch/s morning glory (- washed)
4 clove/s garlic (- minced)
1 tbsp fish sauce

Method

Heat a large pan or wok over a high heat.

Add the oil and then the rest of the ingredients and stir until the morning glory just wilts (about 2-3 minutes).

Enjoy immediately as a side dish.

Airtight (but best enjoyed freshly cooked)
