Mince pies are sweet little treats filled with a mix of fruits and spices. They have a yummy crust and are perfect for dessert. You can share them with your family during the holidays!

Ingredients

2 tbsp sunflower or vegetable oil
2 tbsp brandy
50 g walnuts, roughly chopped
550 g mincemeat
3 egg whites
150 g caster sugar
1 tsp cornflour
1/2 tsp almond extract
250 g rice flour, plus extra for rolling
50 g tapioca flour
50 g potato flour
25 g icing sugar
225 g cold salted butter, cut into small cubes
2 tsp ground nutmeg
1 tbsp xanthan gum
1 egg yolk

Method

Brush 15 holes of regular muffin tins with oil. Roll out the pastry to the thickness of a £1 coin, then use a 9-10cm round cutter to cut out 15 circles.

Shape the dough into a disc, wrap in clingfilm, and chill for 30 minutes.

Pulse the nutmeg and xanthan gum into the flour mixture, then add the egg yolk and 1 tbsp of water. Pulse until the pastry forms a ball, adding more water if needed.

Combine flours, icing sugar, and butter cubes in a food processor until the mixture resembles breadcrumbs.

Line the muffin tin holes with the pastry circles, fill with mincemeat mixed with brandy and walnuts, and chill for another 30 minutes.

Whisk egg whites until soft peaks form, then gradually add caster sugar and cornflour until stiff peaks form. Fold in almond extract.

Top each pie with a dollop of the meringue mixture and bake at 200°C (180°C fan) for 20 minutes or until golden.
