This is a fresh salad with sweet melon and tangy goat cheese. It has crunchy cucumbers and a sweet balsamic glaze. It's easy to make for lunch or a light dinner.

Ingredients

1 medium cantaloupe
1 large cucumber
150 g goat cheese
1 tbsp olive oil
2 tbsp balsamic glaze
1/4 cup roasted pumpkin seeds
1/4 cup fresh parsley
1/4 cup fresh dill
Salt to taste
Black pepper to taste

Method

Cut the cantaloupe in half, remove the seeds, and scoop out bite-sized pieces with a melon baller or cut into cubes.

Peel the cucumber and slice it into thin rounds.

Crumble the goat cheese into small pieces.

In a large bowl, combine the cantaloupe, cucumber, and goat cheese.

Drizzle with olive oil and balsamic glaze, then toss gently to coat.

Season with salt and black pepper to taste.

Chop the fresh parsley and dill, and sprinkle over the salad along with the roasted pumpkin seeds.
