Mediterranean Veggie Kofta Wraps recipe

This recipe is for yummy veggie wraps with homemade koftas. We mix plant-based mince with spices, make koftas, and cook them. Then we wrap them in soft tortillas with fresh veggies and a tangy yogurt sauce. It's fun to make and eat!

Ingredients

400 g plant-based mince
1 large red onion
1 tsp ground coriander
1 tsp smoked paprika
1 tsp cumin seeds
1 bunch of fresh cilantro
4 tbsp Greek yogurt
1/2 cucumber, diced
2 ripe tomatoes, diced
Juice of 1/2 lemon
4 whole wheat tortillas
2 tbsp olive oil
1 tsp harissa paste
1 tsp tahini
4 cloves of garlic, minced
Salt and pepper to taste

Method

Finely dice the red onion and sauté in a pan with 1 tbsp olive oil, cumin seeds, ground coriander, and smoked paprika until the onion is soft and fragrant.

In a bowl, combine the plant-based mince with half of the minced garlic, half of the chopped cilantro, the sautéed onion mixture, harissa paste, salt, and pepper. Mix well.

Form the mixture into 8 small koftas and chill in the refrigerator for 15 minutes.

While the koftas are chilling, prepare the yogurt sauce by mixing Greek yogurt, tahini, the remaining garlic, lemon juice, and a pinch of salt. Set aside.

In another bowl, make a quick salad by combining the diced cucumber, tomatoes, the rest of the cilantro, a drizzle of olive oil, and a squeeze of lemon juice. Season with salt and pepper to taste.

Heat the remaining olive oil in a pan over medium heat and cook the koftas for about 10 minutes, turning occasionally until they are browned and cooked through.

Warm the whole wheat tortillas in a dry pan or microwave.

Assemble the wraps by spreading a tablespoon of the yogurt sauce on each tortilla, adding two koftas, and topping with the fresh salad.

Roll up the tortillas, cut in half if desired, and serve immediately with any remaining yogurt sauce on the side.
