This pasta dish is full of yummy fish and tasty tomatoes. It has spaghetti, tuna, and a lemony sauce. You cook the pasta and mix it with the sauce. Then you put cheese and herbs on top. It's good for dinner and not too hard to make.

Ingredients

4 cloves of garlic, minced

2 medium shallots, finely chopped

1/4 tsp red pepper flakes

2 x (150 g) cans of tuna in olive oil, drained

400 g can of diced tomatoes

500 g spaghetti

1 lemon, zested and juiced

30 g capers, drained

Small handful of parsley, chopped

80 g feta cheese, crumbled

2 tbsp olive oil

Method

Start by cooking the spaghetti in a large pot of salted boiling water according to the package instructions until al dente.

While the pasta is cooking, heat 2 tablespoons of olive oil in a large pan over medium heat. Add the shallots, garlic, and red pepper flakes, and sauté for about 3 minutes until the shallots are soft.

Stir in the diced tomatoes and the olive oil from the tuna cans. Let it simmer for about 10 minutes until the sauce thickens slightly.

Add the drained tuna to the tomato sauce and break it into chunks. Cook for another 5 minutes, allowing the flavors to meld together.

Drain the spaghetti, reserving 1/2 cup of the pasta water. Add the spaghetti and reserved pasta water to the sauce. Toss everything together until the pasta is well coated.

Remove from heat and stir in the lemon zest and juice. Adjust the seasoning with salt and pepper to taste.

Serve the pasta in bowls, topped with crumbled feta cheese, capers, and a sprinkle of chopped parsley.
