Mediterranean Tuna and Mixed Greens Salad recipe

This is a yummy salad with tuna, greens, and cheese. It has nuts, artichokes, and peppers. You mix it all in a bowl and put cheese on top. It's good for lunch or dinner and is healthy.

Ingredients

1/2 cup walnuts, chopped
2 x (170 g) cans artichoke hearts, marinated
1 large cucumber
2 x (142 g) packages mixed greens
2 x (170 g) cans albacore tuna in olive oil
1 small bunch fresh basil
100 g feta cheese, crumbled
75 ml balsamic vinaigrette
1 x (340 g) jar roasted yellow bell peppers

Method

Open the cans of tuna and pour them into a large bowl, oil included, then break the tuna into flakes.

Drain the artichoke hearts and slice them into thin pieces. Add them to the bowl with the tuna.

Drain the roasted yellow bell peppers and chop them into small pieces. Add them to the bowl.

Rinse the cucumber, cut it in half lengthwise, and then slice it into thin half-moons. Add these to the bowl.

Wash the basil, pat it dry, and tear the leaves into smaller pieces, discarding the stems. Add the basil to the bowl.

Add the chopped walnuts and balsamic vinaigrette to the bowl. Gently mix all the ingredients together.

Place the mixed greens onto plates or into bowls.

Top the greens with the tuna mixture.

Crumble feta cheese over each serving and enjoy immediately.
