Mediterranean Tuna and Mixed Greens Salad recipe


This is a yummy salad with greens, tuna, and some special fruits and veggies. It has soft potatoes, sweet oranges, creamy avocado, and tasty olives. You mix it all with a zesty dressing. It's good for lunch or dinner!


1 large avocado
1 head romaine lettuce
2 x (170 g) cans chunk light tuna in water
1/2 cup green olives, pitted
1 lime
500 g baby potatoes
1 blood orange
1/4 red onion
1/4 teaspoon black pepper
2 tablespoons extra virgin olive oil
1 tablespoon Greek yogurt
1 teaspoon honey
1/4 teaspoon salt
1/2 cup cherry tomatoes, halved


Wash and dry all fresh produce.
Cut baby potatoes into halves and place in a medium saucepan; cover with water and bring to a boil over high heat. Once boiling, reduce heat to medium and cook until tender, about 10 minutes. Drain and let cool.
In a large bowl, zest and juice the lime. Add Greek yogurt, olive oil, honey, salt, and pepper. Whisk to combine and create the dressing.
Peel and thinly slice the red onion; add to the dressing and toss to coat.
Peel the blood orange, separate into segments, and cut into bite-sized pieces; add to the bowl.
Cut olives in half and add to the bowl.
Drain the tuna, flake with a fork, and add to the bowl.
Cut the avocado in half, remove the pit, and dice the flesh. Add to the bowl.
Tear the romaine lettuce into bite-sized pieces and add to the bowl, along with the cooled potatoes and cherry tomatoes.
Gently toss the salad to combine all ingredients.
Serve the salad onto plates or bowls and enjoy!
