This is a yummy sandwich with tuna, eggs, and olives. It has a special sauce made from tomatoes and it's put on a tasty bread. There's also a fresh salad with a yummy dressing. It's easy to make and very delicious!

Ingredients

6 oz (170 g) mixed greens
1 x (6 oz) can chunk light tuna in water, drained
2 hard-boiled eggs, chopped
1/2 cup (75 g) cherry tomatoes, halved
1/4 cup (33 g) black olives, sliced
1 tbsp (15 ml) red wine vinegar
2 tbsp (30 ml) olive oil
1 tsp (5 g) Dijon mustard
4 slices of whole grain bread
2 tbsp (30 ml) mayonnaise
1 tbsp (15 g) sun-dried tomato spread
Salt and pepper to taste

Method

In a large bowl, combine the mixed greens and cherry tomatoes.

In a small bowl, whisk together red wine vinegar, olive oil, Dijon mustard, salt, and pepper to create a dressing.

Pour the dressing over the mixed greens and tomatoes, toss to coat, and set aside.

In a medium bowl, mix the drained tuna, chopped eggs, and sliced black olives.

In a separate small bowl, combine mayonnaise and sun-dried tomato spread to make a creamy tomato mayo.

Spread the tomato mayo on one side of each bread slice.

Divide the tuna mixture evenly and place on top of the tomato mayo on two bread slices.

Top with the remaining bread slices to form sandwiches.

Serve each sandwich with a portion of the dressed mixed greens salad.
