This is a yummy fish meal with colorful peppers. The salmon is baked with tasty spices. The peppers are filled with spinach, cheese, and beans. It's a healthy dinner that looks pretty and tastes great!

Ingredients

4 (6 oz) salmon fillets
2 tablespoons extra virgin olive oil
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
4 red bell peppers
1 cup baby spinach, chopped
1 (15 oz) can cannellini beans, drained and rinsed
2 ounces crumbled feta cheese
1/2 cup Greek yogurt
1 tablespoon fresh dill, chopped

Preheat oven to 425°F (220°C).

Wash and dry the fresh produce.

Pat the salmon fillets dry with paper towels. Place them on one half of a large baking sheet. Drizzle with 1 tablespoon olive oil, then season with 1/2 teaspoon salt and 1 teaspoon Italian seasoning.

Trim, seed, and halve the red bell peppers lengthwise; place on the other half of the baking sheet. Drizzle with the remaining 1 tablespoon olive oil, season with black pepper, and arrange cut-side up.

Bake in the preheated oven until the peppers are just starting to soften, about 10 minutes.

In a bowl, mix together the chopped spinach, cannellini beans, feta cheese, Greek yogurt, and chopped dill.

Remove the baking sheet from the oven. Fill each pepper half with the spinach and bean mixture.

Return the baking sheet to the oven and bake until the salmon is cooked through and the peppers are tender, about 5-7 more minutes.

Serve the baked salmon with the stuffed peppers on the side. Enjoy your colorful and healthy Mediterranean meal!
