This is a yummy pita pocket filled with smoked turkey, tangy feta cheese, and sweet roasted red peppers. It's all mixed with fresh parsley and a creamy sauce, then baked until warm and toasty. It's a perfect quick meal!

Ingredients

6 oz smoked turkey breast, sliced
1 x 12 oz jar roasted red bell peppers
4 oz feta cheese, crumbled
1/2 small bunch of fresh parsley
2 whole wheat pitas
1/4 tsp black pepper
1 tbsp Dijon mustard
2 tbsp Greek yogurt
1/4 tsp garlic powder

Method

Preheat your oven to 400°F (205°C).

In a medium bowl, mix together the Greek yogurt, Dijon mustard, black pepper, and garlic powder.

Wash and dry the parsley, then chop the leaves finely and add them to the bowl with the yogurt mixture.

Drain the roasted red peppers and chop them into small pieces, then add to the bowl.

Cut the smoked turkey into small pieces and add to the bowl.

Crumble the feta cheese and add it to the bowl, then stir everything together to make the filling.

Cut the pitas in half to make 4 pockets and carefully open them up.

Stuff the filling evenly into each pita pocket.

Place the filled pita pockets on a baking sheet and bake in the preheated oven for about 8 minutes, or until the pitas are crispy and the filling is heated through.

Take the pitas out of the oven and let them cool for a minute before serving. Enjoy your warm and toasty Mediterranean pita pockets!
