Mediterranean Pita Chips with Chickpea Dip and Greek Salad recipe


This is a yummy snack made with crispy pita chips, creamy chickpea dip, and a fresh Greek salad. We bake the pita with tasty spices, blend chickpeas for the dip, and mix veggies with feta cheese for the salad. It's fun to eat and full of good stuff!


4 whole grain pitas
2 tablespoons extra virgin olive oil
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon black pepper
2 cloves garlic
1 cup plain Greek yogurt
1 tablespoon red wine vinegar
1 tablespoon water
2 (15 oz) cans garbanzo beans (chickpeas), drained and rinsed
2 tablespoons tahini
1 lemon, juiced
1 English cucumber, diced
3 Roma tomatoes, diced
1/4 cup chopped Italian parsley
1 (5 oz) package mixed greens
1 tablespoon honey
3 tablespoons crumbled feta cheese


Preheat your oven to 425°F (220°C).
Cut the pitas into 2-inch pieces and spread them on a baking sheet.
Mix 1 tablespoon olive oil with oregano, cumin, paprika, thyme, salt, and pepper in a bowl.
Drizzle the spice mix over the pita pieces and toss to coat.
Bake the pita pieces for 10 minutes until they are crispy.
For the chickpea dip, blend 1 clove of garlic, Greek yogurt, vinegar, water, chickpeas, tahini, and half of the lemon juice until smooth.
Mix the cucumber, tomatoes, and parsley in a bowl for the salad topping.
In another bowl, whisk together the remaining olive oil, honey, and the rest of the lemon juice for the salad dressing.
Toss the mixed greens with the salad dressing.
Spread the chickpea dip over the crispy pita chips, then add the salad topping and sprinkle with feta cheese.
Serve the pita chips with the Greek salad on the side. Enjoy your snack!
