Mediterranean Lentil Salad with Arugula and Sun-Dried Tomatoes recipe

This is a yummy salad with lentils, arugula, and veggies. It has sun-dried tomatoes and goat cheese. You mix everything in a bowl and put it on top of the arugula. It's easy to make and very tasty!

Ingredients

2 avocados
10 oz baby arugula
1/3 cup sun-dried tomato vinaigrette
4 oz goat cheese, crumbled
1 English cucumber
1 cup sun-dried tomatoes, chopped
1 small bunch basil
2 x (15 oz) cans lentils
1 medium red onion

Method

Peel, halve, and finely chop the red onion. Place it in a large mixing bowl.

Drain and rinse the lentils, then add them to the bowl with the onion.

Wash the cucumber, then trim and dice it. Add the diced cucumber to the bowl.

Chop the sun-dried tomatoes and add them to the mixing bowl.

Rinse the basil leaves, pat them dry, tear them into small pieces, and add them to the bowl.

Halve and pit the avocados. Scoop out the flesh and dice it. Gently fold the avocado into the salad.

Crumble the goat cheese and add it to the salad.

Pour the sun-dried tomato vinaigrette over the salad and toss everything together until well mixed.

To serve, place a portion of baby arugula on each plate and top with the lentil salad mixture.
