These egg muffins are like mini omelets you can eat with your hands! They have spinach, olives, and feta cheese in them. They are good for breakfast or a snack. You cook them in the oven in a muffin pan.

Ingredients

8 large eggs
1 cup fresh spinach, chopped
1/2 cup feta cheese, crumbled
1/4 cup black olives, pitted and chopped
1/4 cup red bell pepper, diced
1 tablespoon fresh oregano, chopped
1/4 teaspoon black pepper
1 tablespoon olive oil for greasing

Preheat your oven to 400°F (205°C) and use olive oil to grease 8 cups of a muffin pan.

In a large bowl, mix together the chopped spinach, crumbled feta cheese, chopped black olives, diced red bell pepper, and fresh oregano.

Evenly divide the vegetable and cheese mixture among the greased muffin cups.

In the same bowl, crack the eggs and add black pepper. Beat the eggs until well combined.

Pour the beaten eggs over the vegetable and cheese mixture in the muffin cups, filling each one about three-quarters full.

Place the muffin pan in the oven and bake for about 15 minutes, or until the eggs are set and the tops are slightly golden.

Remove the pan from the oven and let the muffins cool for a couple of minutes before removing them with a spatula.

Serve the egg muffins warm, and enjoy your Mediterranean-flavored breakfast!
