Mediterranean Chickpea and Quinoa Salad recipe


This is a yummy salad with chickpeas, quinoa, tomatoes, and cucumbers. It has cheese and a lemony dressing. It's good for you and tastes great. You can make it for lunch or dinner.


1 can (400 g) of chickpeas, drained and rinsed
200 g cherry tomatoes, halved
1 small cucumber, diced
2 jarred yellow peppers, chopped
1 small red onion, thinly sliced
Juice of 2 lemons
150 g crumbled feta cheese
20 g fresh parsley, chopped
70 g baby spinach
2 tablespoons extra virgin olive oil
1 teaspoon dried oregano
150 g quinoa, cooked according to package instructions
Salt and pepper to taste


Combine the cooked quinoa, drained chickpeas, halved cherry tomatoes, diced cucumber, chopped yellow peppers, and thinly sliced red onion in a large salad bowl.
In a small bowl, whisk together the lemon juice, olive oil, dried oregano, salt, and pepper to create the dressing.
Pour the dressing over the salad and toss to coat all the ingredients well.
Add the crumbled feta cheese, chopped parsley, and baby spinach to the salad. Gently mix until everything is evenly distributed.
Serve the salad immediately, or let it sit for a few minutes to allow the flavors to meld together.
