This is a yummy salad with crunchy bread, fresh veggies, and a tangy dressing. It has bread cubes, tomatoes, cucumber, and a special sauce. It's good for a sunny day lunch!

Ingredients

1 small Whole Grain Baguette
2 cloves Garlic
1 Cucumber
250 g Cherry Tomatoes
200 g Turkey Bacon
1 Red Onion
1 Tbsp Whole Grain Mustard
3 Romaine Lettuce Hearts
3 Tbsp Extra Virgin Olive Oil
1 Tbsp Balsamic Vinegar
1 Tbsp Honey
1 Lemon
Salt and Pepper to taste

Method

Preheat the oven to 175°C/350°F.

Cut the whole grain baguette into bite-sized cubes. Place them on a baking sheet.

Peel and mince 2 cloves of garlic. Drizzle 2 tablespoons of olive oil over the bread cubes, add the minced garlic, and toss to coat. Season with salt and pepper.

Bake the bread cubes in the oven for 15-20 minutes or until they are golden and crispy, stirring halfway through.

While the bread is toasting, chop the cucumber, cherry tomatoes, and red onion. Tear the romaine lettuce hearts into bite-sized pieces.

Cook the turkey bacon in a pan over medium heat until crispy. Remove and let it cool, then chop into small pieces.

For the dressing, combine the juice of 1 lemon, 1 tablespoon of whole grain mustard, 1 tablespoon of balsamic vinegar, 1 tablespoon of honey, 1 tablespoon of olive oil, and salt and pepper in a jar. Close the lid and shake well to mix.

In a large bowl, combine the toasted bread cubes, chopped vegetables, and turkey bacon.

Drizzle the dressing over the salad and toss everything together until well mixed.

Serve the Mediterranean Bread Salad immediately, or let it sit for a few minutes to allow the flavors to meld.
