Mediterranean Bean and Tomato Salad with Herb Dressing recipe


This is a yummy salad with beans, tomatoes, and nuts. It has a green dressing made with yogurt and herbs. You mix everything together and it's ready to eat in less than 30 minutes!


1 can (400 g) of White Beans, drained and rinsed
300 g Cherry Tomatoes, halved
40 g Roasted Almonds, chopped
1 Tbsp Smoked Paprika
1 Tsp Coriander Seeds
1 Red Bell Pepper, diced
1 Tbsp Balsamic Vinegar
Juice of 1 Lemon
60 ml Extra Virgin Olive Oil
1 Ripe Avocado
20 g Fresh Parsley
20 g Fresh Dill
150 g Greek Yogurt
Salt and Pepper to taste


In a blender, combine the avocado, parsley, dill, lemon juice, and 30 ml of olive oil. Blend until smooth to create the herb dressing. Season with salt and pepper to taste, then mix in the Greek yogurt until well combined. Refrigerate the dressing while preparing the salad.
In a large bowl, combine the drained white beans, halved cherry tomatoes, and diced red bell pepper.
In a small pan, toast the coriander seeds over medium heat until fragrant, about 1-2 minutes. Add the remaining 30 ml of olive oil and smoked paprika to the pan, stirring for another minute. Remove from heat and let it cool for a few minutes.
Pour the spiced oil over the bean and tomato mixture. Add the chopped roasted almonds and balsamic vinegar. Toss everything together until well coated.
To serve, spread the herb dressing on the bottom of a serving platter or individual plates. Top with the bean and tomato salad. Optionally, garnish with additional herbs or a sprinkle of smoked paprika.
