This is a yummy chicken meal with a sweet twist. Chicken strips are coated in a maple glaze and baked until crispy. They're served with a fresh apple cabbage slaw that's both crunchy and tangy.

Ingredients

450 g chicken breasts, boneless skinless
60 ml maple syrup
30 ml Dijon mustard
30 ml olive oil
60 g whole wheat bread crumbs
1/2 tsp smoked paprika
1/4 tsp salt
1/4 tsp black pepper
1/2 small cabbage, shredded
1 large apple, julienned
15 ml apple cider vinegar
15 ml olive oil
1/2 tsp honey
1/4 tsp salt
1/4 tsp black pepper

Method

Preheat oven to 230°C (450°F). Lightly oil a baking sheet with a paper towel.

In a bowl, combine bread crumbs, smoked paprika, salt, and pepper.

In another bowl, whisk together maple syrup, Dijon mustard, and olive oil.

Slice chicken breasts into strips.

Dip each chicken strip into the maple mixture, then coat in the bread crumb mixture. Place on the prepared baking sheet.

Bake in the oven for 15-20 minutes, turning halfway through, until the chicken is golden brown and cooked through.

While the chicken is baking, combine shredded cabbage and julienned apple in a large bowl.

In a small bowl, whisk together apple cider vinegar, olive oil, honey, salt, and pepper to create the slaw dressing.

Pour the dressing over the cabbage and apple mixture, and toss to coat evenly.

Serve the baked chicken strips with the apple cabbage slaw on the side.
