Linguine with Garlic Shrimp, Cherry Tomatoes, Spinach & Walnut Pesto recipe


This is a yummy pasta dish with shrimp and veggies. It has long noodles, red tomatoes, green spinach, and a special sauce made from basil and walnuts. You mix it all together for a tasty meal!


12 oz linguine pasta
1 lb raw peeled shrimp
2 cups cherry tomatoes, halved
2 cups fresh spinach
1/2 cup walnut pesto
1/3 cup Parmesan cheese, grated
1 tablespoon olive oil
1/4 teaspoon crushed red pepper flakes
Salt to taste
2 cloves garlic, minced


Fill a large pot with water, add a pinch of salt, and bring to a boil. Add the linguine and cook according to package instructions until al dente, about 10 minutes.
While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes, and sauté for 1 minute until fragrant.
Add the shrimp to the skillet and cook until they turn pink and are cooked through, about 3-4 minutes per side.
Stir in the cherry tomatoes and cook for another 2 minutes, until they start to soften.
Toss in the fresh spinach and cook until it wilts, about 1-2 minutes.
Drain the cooked linguine, reserving 1/4 cup of the pasta water. Add the linguine to the skillet with the shrimp and vegetables.
Pour in the walnut pesto and the reserved pasta water, and toss everything together until the pasta is well coated with the pesto and the ingredients are evenly distributed.
Remove from heat, sprinkle with grated Parmesan cheese, and serve immediately.
