Lemony Orzo with Peas and Herbs recipe

This is a yummy pasta dish with tiny orzo noodles. It has green peas, cheese, and fresh herbs. We use lemon to make it taste bright. It's easy to make for lunch or dinner!

Ingredients

250 g Orzo
150 g Frozen peas
1 Large lemon, zest and juice
150 g Baby spinach
1 Bunch of parsley
1 Bunch of dill
2 Cloves of garlic
50 g Almonds, toasted
60 g Feta cheese, crumbled
3 tbsp Extra virgin olive oil
Salt to taste
Black pepper to taste

Method

Bring a large pot of salted water to a boil. Add orzo and cook according to package instructions until al dente.

In the last 2 minutes of cooking the orzo, add the frozen peas to the pot. Cook for 2 minutes, then drain the orzo and peas and set aside.

While the orzo is cooking, make the herb sauce. In a food processor, combine the lemon zest, juice of the lemon, half of the baby spinach, parsley, dill, toasted almonds, garlic, salt, and pepper. Pulse until well combined. While pulsing, drizzle in the olive oil until the mixture becomes a coarse pesto.

In a large bowl, combine the cooked orzo and peas with the herb sauce. Mix well to coat the pasta.

Add the remaining baby spinach and the crumbled feta cheese to the orzo mixture. Toss until the spinach is slightly wilted and the feta is evenly distributed.

Taste and adjust seasoning with more salt, pepper, or lemon juice if needed.

Serve the orzo warm or at room temperature, garnished with extra herbs or almond flakes if desired.
