Lemon Herb Chicken Salad with Feta recipe

This is a yummy salad with chicken, cheese, and fresh veggies. You mix cooked chicken with lemon, feta cheese, and greens. It's fresh and has a creamy dressing. Great for lunch or dinner!

Ingredients

4 skinless chicken breasts
1 bulb of garlic
1 lemon
100 g feta cheese, crumbled
2 tbsp mayonnaise
1 romaine lettuce, chopped
150 g cherry tomatoes, halved
1 cucumber, sliced
1 small bunch of dill, chopped
2 tbsp olive oil
Salt and pepper to taste

Method

Preheat your oven to 180ºC/356°F.

Place the chicken breasts in a baking tray, drizzle with 1 tbsp of olive oil, and season with salt and pepper. Massage the chicken to coat evenly.

Cut the top off the bulb of garlic, place it in the center of the baking tray, and roast everything for 30 minutes or until the chicken is cooked through.

While the chicken is cooking, prepare the salad by combining the chopped romaine lettuce, halved cherry tomatoes, sliced cucumber, and chopped dill in a large salad bowl.

In a medium bowl, whisk together the mayonnaise, juice of the lemon, crumbled feta cheese, and 1 tbsp of olive oil to create a creamy dressing. Season with salt and pepper to taste.

Once the chicken is done, let it rest for a few minutes, then shred it using two forks.

Squeeze the roasted garlic out of its skins and mash it into a paste. Stir the garlic paste into the creamy dressing.

Add the shredded chicken to the salad bowl with the vegetables. Pour the dressing over the salad and toss everything together until well mixed.

Serve the salad immediately, or chill in the refrigerator for an hour before serving for a refreshing meal.
