Lemon-Garlic Zucchini Noodles with Almonds & Feta recipe

This is a yummy salad made with zucchini noodles. It has a lemon and garlic taste. There are also almonds and feta cheese in it. It's a fresh and healthy dish you can eat for lunch or dinner.

Ingredients

1 package (20 g) fresh mint
3 cloves garlic
2 lemons
200 g feta cheese, crumbled
1/2 cup sliced almonds
4 large zucchini
1/4 teaspoon black pepper
3 tablespoons extra virgin olive oil
1/2 teaspoon salt

Method

Wash and dry the fresh mint and zucchini.

Trim the ends off the zucchini. Use a spiralizer or peeler to make zucchini noodles. Put them in a colander with salt to drain.

Zest the lemons and squeeze out their juice. Put both in a big bowl.

Peel and chop the garlic very small. Mix it with the lemon zest, juice, olive oil, and black pepper in the bowl.

Put a pan on medium heat. Add the sliced almonds. Cook them until they smell nice and are a little brown. This takes about 3-5 minutes. Stir them so they don't burn.

Take the mint leaves off the stems. Cut them into small pieces.

Shake the zucchini noodles to get rid of extra water. Then put them on a clean towel, roll it up, and squeeze out more water over the sink.

Put the zucchini noodles in the bowl with the lemon and garlic mix. Stir everything together.

Put the zucchini noodles on plates. Add almonds and feta cheese on top. Sprinkle with mint pieces. Now it's ready to eat!
