Lemon-Garlic Shrimp with Spinach & Angel Hair Pasta recipe

This is a yummy pasta dish with shrimp, spinach, and a lemon-garlic sauce. You cook pasta, then shrimp, and mix them with spinach and a tasty sauce. It's good for dinner and not too hard to make!

Ingredients

250 ml chicken or vegetable broth
5 cloves garlic, minced
1 bunch spinach, washed and chopped
2 lemons, juiced and zested
50 g Parmesan cheese, grated
680 g raw peeled shrimp, fresh or thawed
2 yellow bell peppers, sliced
225 g angel hair pasta
1/4 tsp black pepper
2 tbsp olive oil
1/4 tsp crushed red pepper
1/2 tsp salt

Method

Fill a large pot with water, add a pinch of salt, and bring to a boil. Add the angel hair pasta and cook for 4-5 minutes until al dente. Drain and set aside.

While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the minced garlic and cook for 1 minute until fragrant.

Add the sliced yellow bell peppers and crushed red pepper to the skillet. Cook for 3-4 minutes until the peppers are slightly softened.

Place the shrimp in the skillet and cook for 2-3 minutes on each side, until they turn pink and are cooked through. Remove the shrimp and set aside.

Pour the broth into the skillet and bring to a simmer. Let it reduce slightly, about 3 minutes.

Stir in the chopped spinach and cook until wilted, about 2 minutes.

Return the shrimp to the skillet. Add the cooked pasta, lemon juice, lemon zest, and half of the grated Parmesan. Toss everything together and season with salt and black pepper.

Serve the pasta in bowls, sprinkled with the remaining Parmesan cheese. Enjoy your meal!
