Lemon-Garlic Chicken with Zesty Tomato-Avocado Salad recipe


This is a yummy chicken dish with a fresh salad. You cook chicken with lemon and garlic. Then you mix tomatoes, avocado, and herbs for a salad. It's a healthy and tasty meal for lunch or dinner.


2 tablespoons olive oil
1 1/2 lb chicken breasts, boneless skinless
1 1/2 cups plain Greek yogurt
2 tablespoons lemon juice
1 tablespoon garlic powder
1 teaspoon ground turmeric
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
2 ripe avocados
2 large tomatoes
1 small bunch cilantro
1 tablespoon red wine vinegar
1/4 cup feta cheese, crumbled


In a large bowl, mix together the Greek yogurt, 1 tablespoon lemon juice, garlic powder, turmeric, cumin, salt, and pepper.
Cut the chicken breasts in half horizontally to create thin fillets and place them in the bowl with the yogurt mixture. Coat well and set aside to marinate for 15 minutes.
While the chicken is marinating, wash and dry the fresh produce.
Dice the tomatoes and avocados and place them in a separate bowl.
Chop the cilantro leaves and add to the tomato-avocado mixture.
Drizzle the remaining 1 tablespoon lemon juice and red wine vinegar over the salad and toss gently. Sprinkle with crumbled feta cheese.
Heat olive oil in a grill pan or skillet over medium-high heat.
Remove the chicken from the marinade, wiping off any excess, and place it in the hot pan.
Cook the chicken until it's cooked through and golden brown, about 3 to 4 minutes per side. Transfer to a plate once done.
Serve the grilled chicken with the zesty tomato-avocado salad on the side.
