Lamb Kofta & Zucchini Skewers with Mint Yogurt Sauce recipe


This recipe is for grilled lamb kofta and zucchini on skewers. It's served with a fresh mint yogurt sauce and a side of lemony fennel salad. You mix ground lamb with spices, make balls, and cook them with zucchini. It's yummy and fun to eat!


500 g Ground Lamb
1 Garlic Clove
1 Tbsp Ground Cumin
1 Tbsp Ground Coriander
2 Zucchinis
200 g Greek Yogurt
1 Tbsp Fresh Mint, chopped
1 Tbsp Lemon Juice
4 Flatbreads
1 Lemon
1/2 Bunch of Mint
1 Bulb of Fennel
2 Tbsp Sunflower Seeds
2 Tbsp Olive Oil
Salt and Pepper to taste


Preheat the grill to high. Cut the zucchinis into 2 cm discs and toss with 1 tbsp olive oil, salt, and pepper.
In a bowl, combine the ground lamb, minced garlic, ground cumin, ground coriander, salt, and pepper. Mix well and form into 16 meatballs.
Thread the lamb meatballs and zucchini discs onto skewers, alternating between them.
Place the skewers on an oiled baking tray and grill for about 15 minutes, turning halfway, until the meatballs are cooked and the zucchini is tender.
For the mint yogurt sauce, mix Greek yogurt with chopped mint, lemon juice, and a pinch of salt. Set aside.
Make the fennel salad by thinly slicing the fennel bulb and mixing with the juice of one lemon, 1 tbsp olive oil, chopped mint leaves, sunflower seeds, and seasoning with salt and pepper.
Serve the skewers with the mint yogurt sauce and fennel salad, accompanied by warm flatbreads.
