This Keto Apple Pie recipe uses no apples but still tastes EXACTLY like apple pie! Make a sugar-free, healthy apple pie filling recipe in 20 minutes.

Ingredients

4 cups Chopped, Peeled Eggplant
1/4 cup Truvia
3 tablespoons Butter
1/2 teaspoon Xanthan Gum
2-3 teaspoons Apple Pie Spice
1/2-3/4 cup Water
1/2 cup Whipped Cream

Method

Peel eggplant and chop into small dices.

Add butter, eggplant, stevia and 1/2 cup of water in a 10-inch saucepan,. Cover and cook until the eggplant is cooked through, about 5 minutes.

Add in apple pie spice and xanthan gum and stir. Add 1/4 cup additional water if needed. Allow everything to cook and thicken for an additional 1-2 minutes.

Serve with whipped cream and do not treat the whipped cream as optional in this recipe.
