Kale and Sun-Dried Tomato Penne recipe


This is a yummy pasta dish with green kale and red sun-dried tomatoes. It's made with penne noodles and has a little spice from red pepper flakes. You mix it all together for a tasty meal.


200 g kale
2 cloves of garlic
400 g penne pasta
1 tbsp red pepper flakes
50 g sun-dried tomatoes
50 g Parmesan cheese, grated
2 tbsp olive oil
Salt to taste


Bring a large pot of well-salted water to a boil.
Wash and strip the leaves from the kale, peel the garlic, and add both to the pot. Cook for about 5 minutes, then remove, keeping the water.
Cook the penne in the kale cooking water until al dente, about 10-12 minutes.
While the pasta cooks, chop the sun-dried tomatoes and set aside.
Place the cooked kale and garlic into a blender and pulse until it's a rough paste.
In a large frying pan, heat 2 tablespoons of olive oil over medium heat. Add the red pepper flakes and sizzle gently for a minute.
Drain the pasta and add to the pan with the oil and red pepper flakes. Add the kale paste, sun-dried tomatoes, and a splash of the pasta water. Mix well to combine.
Serve the pasta in bowls and top with grated Parmesan cheese.
