This is a yummy bread from Italy called Focaccia. It's soft and a little bit chewy. You make it with flour, water, yeast, and olive oil. It has little dimples on top with salt and rosemary for extra flavor.

Ingredients

500 g strong white bread flour
7 g fast action yeast
1.5 tsp sea salt flakes, plus extra for sprinkling
375 ml warm water
8 tbsp extra virgin olive oil, plus more for drizzling
2 sprigs fresh rosemary, leaves picked

Method

In a large bowl, mix the flour, yeast, and 1 tsp of sea salt flakes. Gradually add the warm water and mix until you have a sticky dough.

Knead the dough on a lightly oiled surface for about 10 minutes until it becomes smooth and elastic.

Place the dough in a clean, lightly oiled bowl, cover with a tea towel, and let it rise for 1 hour or until doubled in size.

Preheat the oven to 220C (430F). Oil a baking sheet.

Punch down the risen dough, knead briefly, then shape into a rectangle on the baking sheet. Let it rise for another 30 minutes.

Use your fingers to make dimples in the dough. Mix 6 tbsp of olive oil with the rosemary leaves and drizzle over the dough. Sprinkle with extra sea salt flakes.

Bake for 20 minutes or until golden brown. Cover with foil for a few minutes after baking to soften the crust.

Drizzle with a little more olive oil before serving, if desired.
