Ingredients

3 Tbsps Sriracha sauce
5 Tbsps Honey
3 Tbsps Soy Sauce
1 Tbsp Apple Cider Vinegar
1 Tbsp Brown Sugar
1 Tsp Sesame Oil
60 ml Water
1 Tbsp Grated Ginger
3 Cloves of Garlic, minced
700 g Chicken Breast, cut into tenders
2 Eggs, beaten
100 g Cornstarch
50 g All-Purpose Flour
1 Tsp Baking Powder
1 Tsp Paprika
1 Tsp Onion Powder
2 Green Onions, sliced
1 Tbsp Toasted Sesame Seeds
3 Tbsps Mayonnaise
1 L Canola Oil (For Frying)

Method

1
In a bowl, combine the sriracha, honey, soy sauce, apple cider vinegar, brown sugar, sesame oil, water, grated ginger, and minced garlic to create the sauce. Set aside.
2
In one mixing bowl, combine the cornstarch, all-purpose flour, baking powder, paprika, and onion powder. Season with salt and pepper to taste.
3
Dip the chicken tenders into the beaten eggs, then dredge them in the flour mixture until well coated. Set aside on a plate.
4
Heat the canola oil in a deep fryer or large pot to 175°C (350°F).
5
Fry the chicken tenders in batches, being careful not to overcrowd the pot. Cook until golden brown and cooked through, about 4-5 minutes per batch.
6
Transfer the fried chicken to a paper towel-lined plate to drain excess oil.
7
In a separate pan, heat the sauce over medium heat until it thickens slightly, about 3-4 minutes.
8
Toss the fried chicken tenders in the sauce until evenly coated.
9
Mix the mayonnaise with a tablespoon of the thickened sauce in a small bowl for a dipping sauce.
10
Garnish the chicken with toasted sesame seeds and sliced green onions. Serve with the spicy mayonnaise dipping sauce.
