Honey-Soy Glazed Pork with Vegetables & Rice recipe

This dish is a bowl of rice topped with sweet and savory pork, cooked with honey and soy sauce. It has crunchy carrots and cucumbers. It's a yummy meal that's a little bit sweet and a little bit salty.

Ingredients

1 cup jasmine rice
2 cups water
1 tablespoon vegetable oil
4 cloves garlic, minced
1 tablespoon ginger, minced
1 lb lean ground pork
2 tablespoons honey
3 tablespoons soy sauce
1 tablespoon rice vinegar
2 medium carrots, peeled into ribbons
1 English cucumber, sliced into half-moons
4 green onions, sliced
1 teaspoon sesame seeds

Method

Rinse the jasmine rice under cold water, then combine with 2 cups of water in a saucepan. Bring to a boil, then cover and simmer for 18 minutes until water is absorbed. Remove from heat and let it stand covered for 5 minutes.

Heat vegetable oil in a large skillet over medium-high heat. Add minced garlic and ginger, and cook for 1 minute until fragrant.

Add the ground pork to the skillet, breaking it apart with a spoon. Cook until browned, about 5 minutes.

Stir in honey, soy sauce, and rice vinegar with the pork. Cook for another 5 minutes until the sauce thickens and glazes the pork.

Prepare the vegetables by peeling the carrots into ribbons and slicing the cucumber into half-moons. Set aside.

Slice the green onions, separating the white and green parts.

Add the white parts of the green onions to the pork and cook for an additional minute.

To assemble, divide the cooked rice among bowls. Top with the honey-soy glazed pork, carrot ribbons, cucumber slices, and green parts of the onions.

Garnish with sesame seeds and serve immediately.
