This is a yummy salad with fresh spinach and sweet nectarines. It has crunchy almonds and soft feta cheese. The dressing is sweet and tangy. It's good for you and tastes great!

Ingredients

2 tablespoons sliced almonds
5 ounces baby spinach
3 nectarines
1/4 cup crumbled feta cheese
1/4 cup plain Greek yogurt
1 tablespoon Dijon mustard
2 tablespoons honey
2 tablespoons apple cider vinegar
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
1/4 cup whole wheat bread crumbs

In a dry skillet over medium heat, toast the sliced almonds until golden and fragrant, about 2-3 minutes. Remove from heat and let cool.

In a large bowl, whisk together Greek yogurt, Dijon mustard, honey, apple cider vinegar, salt, and black pepper to create the dressing.

Wash the baby spinach and add it to the bowl with the dressing. Toss to coat the spinach leaves evenly.

Wash the nectarines, remove the pits, and cut them into bite-sized pieces. Add the nectarine pieces to the salad.

Crumble the feta cheese over the salad and add the toasted almonds.

In the same skillet used for the almonds, heat the olive oil over medium heat. Add the whole wheat bread crumbs and toast until golden and crispy, about 3-4 minutes. Let cool slightly.

Sprinkle the toasted bread crumbs over the salad just before serving to maintain their crunchiness.
