Honey-Mustard Pork Chops with Butternut Squash & Green Beans recipe

This is a yummy dinner with pork chops covered in a sweet honey-mustard sauce. It comes with tasty butternut squash and green beans. You cook it all in the oven and in a pan. It's not too hard to make!

Ingredients

1 butternut squash
400g green beans
3 tablespoons honey
2 tablespoons whole grain mustard
4 pork chops, boneless
2 tablespoons olive oil
1 teaspoon thyme, dried
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons unsalted butter

Method

Preheat your oven to 230°C (450°F). Get a baking sheet ready with foil or parchment paper.

Peel the butternut squash, cut it in half, take out the seeds, and chop it into 1/2-inch cubes. Put them in a big bowl.

Trim the ends off the green beans and put them in the bowl with the squash.

Add 1 tablespoon of olive oil, thyme, salt, and pepper to the veggies. Mix them so they're all covered.

Spread the veggies on the baking sheet. Bake them for about 20-25 minutes until they're soft and a little brown. Stir them around halfway through.

While the veggies are baking, mix the honey and mustard in a small bowl to make the sauce.

Put a pan on medium-high heat and add the rest of the olive oil.

Season the pork chops with a little salt and pepper. Cook them in the pan for about 3-4 minutes on each side until they're brown and cooked in the middle.

Take the pork chops out of the pan and put them on a plate. Add the butter to the pan and let it melt.

Pour the honey-mustard sauce into the pan and stir it with the butter for about 1 minute.

Put the pork chops back in the pan and coat them with the sauce.

Serve the pork chops with the sauce and the roasted veggies on the side.
