This is a yummy meal with chicken and cheese in a crispy tortilla. It's like a Mexican grilled cheese with chicken inside. We use honey and mustard to make it sweet and tangy. Cook until it's golden and eat it hot!

Ingredients

650 g Chicken Thigh Fillets

1 Tbsp Honey

1 Tbsp Dijon Mustard

200 g Cheddar Cheese

200 g Monterey Jack Cheese

4 Large Flour Tortillas

1 Tbsp Olive Oil

1/2 Tsp Garlic Powder

1/2 Tsp Onion Powder

1/2 Tsp Black Pepper

1/2 Tsp Salt

4 Tbsp Greek Yogurt

2 Tbsp Chopped Fresh Parsley

Method

In a bowl, mix together the honey, Dijon mustard, garlic powder, onion powder, salt, and black pepper to create a marinade.

Coat the chicken thigh fillets with the marinade and let them sit for 10 minutes.

Heat a frying pan over medium-high heat with 1 tablespoon of olive oil. Add the marinated chicken and cook for about 4 minutes on each side until caramelized and cooked through. Remove from the pan and let it cool slightly.

Shred the cooked chicken with two forks and place it in a bowl.

Grate the cheddar and Monterey Jack cheeses and mix them together.

Place a large flour tortilla in the pan over low heat. Sprinkle a quarter of the cheese mixture on the tortilla, add a quarter of the shredded chicken, dollop 1 tablespoon of Greek yogurt, and then sprinkle with more cheese.

Top with another tortilla and cook until the bottom is golden brown, about 3 minutes. Carefully flip the quesadilla and cook the other side until golden brown, another 3 minutes.

Remove from the pan and let it rest for 1 minute before cutting into quarters. Sprinkle with chopped fresh parsley.

Repeat with the remaining tortillas, cheese, chicken, and yogurt to make 4 quesadillas in total.

Serve the quesadillas hot and enjoy!
