Honey Mustard Chicken Cobb Salad with Cherry Tomatoes, Avocado, and Blue Cheese recipe


This is a yummy salad with lots of good things like chicken, tomatoes, avocado, and cheese. It's covered in a sweet and tangy dressing. You can make it for lunch or dinner. It's easy to make and very tasty!


2 boneless, skinless chicken breasts
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
6 slices turkey bacon
1 large avocado
1 cup cherry tomatoes
4 hard-boiled eggs, peeled
1/2 cup blue cheese crumbles
6 cups chopped romaine lettuce
1/3 cup honey mustard dressing


Season the chicken breasts with salt and pepper.
Heat olive oil in a skillet over medium-high heat. Add the chicken and cook until golden and no longer pink in the center, about 6-7 minutes per side. Let it rest before dicing.
While the chicken cooks, small dice the turkey bacon.
In the same skillet, cook the turkey bacon until crispy, about 4-5 minutes. Transfer to a paper towel-lined plate.
Wash and dry the lettuce, then chop it into bite-sized pieces.
Cut the cherry tomatoes in half.
Halve and pit the avocado; scoop out the flesh and dice it.
Roughly chop the hard-boiled eggs.
Slice the rested chicken into bite-sized pieces.
To assemble the salad, divide the lettuce among plates. Top with the chicken, cherry tomatoes, avocado, turkey bacon, eggs, and blue cheese crumbles.
Drizzle with honey mustard dressing before serving.
