Honey-Lime Chicken Skewers with Avocado Salad recipe

This is a yummy chicken dish on sticks with a fresh salad. The chicken is sweet and tangy. The salad has avocado, tomato, and herbs. It's good for a fun meal!

Ingredients

450 g Boneless Skinless Chicken Thighs
3 Tbsp Honey
2 Tbsp Soy Sauce
1 Tbsp Brown Sugar
1 Tbsp Water
3 Tbsp Lime Juice
1/2 Tsp Red Pepper Flakes
2 Cloves of Garlic, minced
1 Handful of Cilantro, chopped
2 Tbsp Olive Oil
1 Ripe Avocado
1 Handful of Cherry Tomatoes, halved
1 Handful of Cilantro, chopped
1 Handful of Parsley, chopped
1 Clove of Garlic, minced
30 g Roasted Almonds, chopped
1 1/2 Tbsp Apple Cider Vinegar
1 Tsp Honey
2 Tbsp Lime Juice
Salt to taste

Method

Cut the chicken into 3 cm chunks and place in a bowl.

Combine honey, soy sauce, brown sugar, water, 2 tablespoons of lime juice, red pepper flakes, minced garlic, and chopped cilantro in a bowl to create the marinade.

Pour the marinade over the chicken, mix well, and let it sit in the fridge for at least 15 minutes.

While the chicken is marinating, soak wooden skewers in water to prevent burning.

Preheat the grill or a grill pan over medium heat and lightly oil the grates or pan.

Thread the marinated chicken pieces onto the skewers.

Grill the chicken skewers for about 7-8 minutes on each side or until the chicken is cooked through and has a nice char.

For the salad, dice the avocado and place it in a large bowl with the halved cherry tomatoes.

Add the chopped cilantro, parsley, minced garlic, and roasted almonds to the bowl.

In a small bowl, whisk together apple cider vinegar, the remaining 1 tablespoon of lime juice, honey, and a pinch of salt to create the dressing.

Pour the dressing over the salad and gently toss to combine.

Serve the grilled chicken skewers alongside the avocado salad.
