Honey Glazed Shrimp with Citrus Rice recipe

This dish is a yummy mix of sweet, sticky shrimp and fresh, zesty rice. We cook shrimp with honey and lemon, then mix it with rice that has orange bits and green onions. It's a fun meal that's not too hard to make!

Ingredients

2 medium-sized onions, chopped
1 orange bell pepper, chopped
1 yellow bell pepper, chopped
150 ml orange juice
60 ml lemon juice
100 g honey
1 Tbsp tomato paste
1 Tbsp soy sauce
1 Tbsp cornflour
400 g large shrimp, peeled and deveined
1/2 Tsp garlic powder
1/2 Tsp black pepper
1 large egg, beaten
60 g cornflour, for coating
300 g jasmine rice
2 cloves garlic, minced
4 spring onions, sliced
1 small red chili, finely chopped
2 Tbsp soy sauce
1 Tbsp vegetable oil
Zest of 1 orange
1/2 Tsp black pepper

Method

Start by cooking the jasmine rice according to package instructions. Once cooked, fluff with a fork and set aside to cool.

In a bowl, combine the shrimp with garlic powder, black pepper, and a pinch of salt. Add the beaten egg and mix well. Then, coat the shrimp with 60g of cornflour.

In a saucepan, mix together the orange juice, lemon juice, honey, soy sauce, and tomato paste. Heat over medium until it starts to bubble. Mix 1 Tbsp of cornflour with 2 Tbsp of water to make a slurry, then add to the saucepan. Cook until the sauce thickens, about 3 minutes.

Heat a wok or large frying pan with vegetable oil over medium-high heat. Fry the coated shrimp for 2 minutes or until golden and crispy. Remove and drain on paper towels.

In the same wok, add the chopped onions and bell peppers. Stir-fry for a few minutes until they begin to soften.

Add the crispy shrimp to the wok with the vegetables and pour the honey citrus sauce over the top. Toss everything together and cook for another 2 minutes.

For the citrus rice, heat a separate wok or pan over high heat. Add a tablespoon of oil and the minced garlic. Fry for 30 seconds until fragrant.

Add the cooked rice to the pan with the garlic, along with the soy sauce, orange zest, and black pepper. Stir well to combine and cook for 2 minutes.

Finally, stir in the sliced spring onions and chopped red chili, cooking for an additional minute.

Serve the honey glazed shrimp over the citrus rice and enjoy your sweet and tangy meal!
