Honey Glazed Salmon with Green Bean, Bell Pepper & Rice Salad recipe

This is a yummy fish dish with a sweet glaze and a fresh salad. We cook rice and mix it with crunchy green beans and sweet bell peppers. Then we cook salmon with a honey glaze until it's just right. We put it all on a plate to make a tasty meal.

Ingredients

1 1/2 cups brown rice
32 fl oz vegetable broth
2 tablespoons honey
1 tablespoon balsamic vinegar
1 tablespoon olive oil
1 1/2 lb salmon fillet
12 oz green beans, trimmed
1 red bell pepper, thinly sliced
2 tablespoons lemon juice
1 teaspoon garlic powder
Salt to taste
Black pepper to taste

Method

In a medium saucepan, combine brown rice and vegetable broth; bring to a boil. Reduce heat to a simmer, cover, and cook for 30 minutes or until rice is tender.

Preheat oven to broil and position rack under the broiler.

Place salmon fillets in a baking dish and season with salt and pepper. Place in the oven and broil for 3 minutes.

In a small bowl, combine honey, balsamic vinegar, and a pinch of pepper.

Take salmon out of the oven and spoon honey mixture over top. Return to oven and cook until salmon is opaque, another 5-6 minutes.

While salmon is cooking, steam green beans for about 4 minutes until tender-crisp.

In a large bowl, whisk together lemon juice, olive oil, garlic powder, salt, and pepper to create a dressing.

Add the cooked rice, steamed green beans, and sliced bell pepper to the bowl with the dressing and toss to combine.

To serve, place rice salad on a plate and top with the honey glazed salmon. Enjoy!
