Honey-Glazed Chicken Thigh Skewers recipe

This recipe is for yummy chicken skewers with a sweet honey glaze. You cook chicken and veggies, then put them on sticks. They get sticky and caramelized in the oven. It's a fun meal that tastes great!

Ingredients

4 boneless chicken thighs, about 600 g
1 large onion
2 medium carrots
2 cloves of garlic
1 red bell pepper
100 g honey
150 g ketchup
50 g brown sugar
1 tsp onion powder
1 tsp smoked paprika
30 ml soy sauce
30 ml apple cider vinegar
2 ripe bananas
Salt and pepper to taste

Method

Preheat the oven to 200°C (390°F).

Cut the chicken thighs into 1-inch pieces and season with salt and pepper.

Peel and cut the onion and carrots into bite-sized pieces. Mince the garlic and cut the red bell pepper into squares.

To make the honey glaze, combine honey, ketchup, brown sugar, onion powder, smoked paprika, soy sauce, and apple cider vinegar in a saucepan over medium heat. Stir until the sugar dissolves and the sauce thickens.

Thread the chicken, onion, carrots, and bell pepper onto skewers, alternating between them.

Place the skewers on a baking sheet and brush them with the honey glaze.

Roast in the oven for 25-30 minutes, turning occasionally and brushing with more glaze until the chicken is cooked through and the vegetables are tender.

While the skewers cook, peel the bananas and cut them into slices. Fry in a pan with a little oil over medium heat until golden brown on both sides.

Serve the skewers with the fried banana slices and extra honey glaze on the side.
