Honey-Ginger Chicken Udon Bowl with Snap Peas & Carrot Ribbons recipe

This is a yummy noodle bowl with chicken, snap peas, and carrots. It has a sweet and tangy sauce made with honey and ginger. You mix everything in a bowl and eat it. It's good for lunch or dinner.

Ingredients

9 oz udon noodles
1 tbsp honey
1 tbsp grated fresh ginger
2 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp sesame oil
2 cups snap peas, trimmed
2 medium carrots, peeled into ribbons
16 oz cooked chicken breast, shredded
1 tbsp sesame seeds
1/4 cup chopped cilantro

Method

Bring a large pot of water to a boil. Cook the udon noodles according to package instructions, adding the snap peas during the last 2 minutes of cooking. Drain and rinse with cold water to stop the cooking process.

In a small bowl, whisk together the honey, grated ginger, soy sauce, rice vinegar, and sesame oil to create the dressing.

In a large bowl, combine the cooked udon noodles, snap peas, and carrot ribbons.

Pour the dressing over the noodle mixture and toss to coat evenly.

Add the shredded chicken to the bowl and mix until the chicken is well coated with the dressing.

Divide the mixture into serving bowls and garnish with sesame seeds and chopped cilantro.
