Honey Balsamic Flank Steak with Apple, Spinach & Feta Salad recipe

This is a yummy steak salad with sweet apples and tangy feta cheese. The steak is cooked with honey and balsamic dressing. It's a fresh and tasty meal for dinner.

Ingredients

1 lb flank steak
1/4 cup balsamic vinegar
2 tablespoons honey
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon vegetable oil
2 medium apples
1 (6 oz) pkg baby spinach
1/2 cup crumbled feta cheese
1 small red onion

Method

In a bowl, whisk together balsamic vinegar, honey, olive oil, salt, and pepper to create the marinade.

Place the flank steak in the marinade and ensure it's well coated. Let it marinate for at least 15 minutes.

While the steak marinates, core and slice the apples into thin wedges. Peel and thinly slice the red onion into half rings.

Heat a grill pan or skillet over medium-high heat and add vegetable oil.

Remove the steak from the marinade, reserving the marinade for later use.

Cook the steak in the heated pan for 5-7 minutes per side for medium-rare, or until desired doneness.

Transfer the steak to a plate, cover loosely with foil, and let it rest for 5 minutes.

In the same pan, add the apple and onion slices; cook until lightly browned and tender, about 3 minutes per side.

Slice the steak against the grain into thin strips.

In a large bowl, toss the baby spinach with the cooked apples and onions.

To serve, divide the salad among plates, top with sliced steak and crumbled feta cheese.

Drizzle with the reserved marinade as a dressing. Enjoy!
