Honey Balsamic Chicken with Mozzarella Tomato Salad recipe

This is a yummy chicken dish with a sweet twist. We cook chicken with honey and balsamic. Then we make a salad with cheese, tomatoes, and basil. It's a good meal for dinner.

Ingredients

1 lb chicken breasts, boneless skinless
1 small pkg fresh basil
1 (8 oz) pkg fresh mozzarella cheese
2 cloves garlic
4 large tomatoes
3 tablespoons balsamic vinegar
1 tablespoon honey
1/4 teaspoon black pepper
3 tablespoons extra virgin olive oil
1/2 teaspoon salt
1/4 teaspoon dried oregano

Method

Preheat a grill pan or regular skillet over medium heat.

Trim off and discard the root ends of the garlic; peel and mince the garlic. Transfer to a medium bowl.

To the garlic, add 2 tablespoons olive oil, 2 tablespoons balsamic vinegar, honey, salt, and pepper; whisk together to create the marinade.

Pat dry the chicken breasts with paper towels and place them in the bowl with the marinade; turn to coat. Let sit for 10 minutes.

Place the chicken breasts in the grill pan or skillet; cook until golden brown and cooked through, about 6 to 8 minutes per side. Once done, transfer the chicken to a plate and let it rest.

Wash and dry the fresh produce.

Slice the tomatoes crosswise into 1/4-inch-thick rounds and arrange on a serving platter.

Slice the mozzarella and add on top of the tomato slices.

Pick the basil leaves off the stems; tear the leaves into small pieces and scatter on top of the tomato slices and mozzarella.

In a small bowl, mix together 1 tablespoon of olive oil, 1 tablespoon of balsamic vinegar, dried oregano, and a pinch of salt to create a dressing.

Drizzle the dressing over the salad.

Slice the chicken crosswise into strips and arrange on the serving platter with the salad.
