Ingredients

4 boneless pork chop, about 1 inch thick
1 tsp sea salt
1 tsp brown sugar
1/2 tsp smoked paprika
1/2 tsp black pepper
1/2 tsp dried thyme
1/2 tsp onion powder
1/2 tsp garlic powder
1 large ciabatta loaf
1/4 red cabbage
1/2 red onion
1/4 cup apple cider vinegar
2 tbsp granulated sugar
2 medium-sized red apples
2 tbsp honey
2 tbsp hot sauce
Juice of 1/2 orange
4 tbsp Greek yogurt
1 clove of garlic, minced
1 tbsp olive oil

Method

1
Preheat your oven to 325°F (163°C).
2
Mix the salt, brown sugar, smoked paprika, black pepper, dried thyme, onion powder, and garlic powder together in a bowl.
3
Rub the spice mix all over the pork chops, then place them in a baking dish with a little olive oil. Cover with foil and bake for 1 hour until tender.
4
While the pork is cooking, make the apple glaze. Core and chop the apples, then cook them in a saucepan with honey, hot sauce, and orange juice over medium heat until the apples are soft, about 15 minutes. Blend until smooth.
5
For the salad, thinly slice the red cabbage and red onion. Mix with apple cider vinegar and sugar, and let it sit to pickle slightly.
6
In a small bowl, combine Greek yogurt and minced garlic to make a garlic yogurt spread.
7
Once the pork is done, let it rest for a few minutes, then slice thinly.
8
Cut the ciabatta loaf into 4 equal parts and toast lightly.
9
Spread the garlic yogurt on the bottom half of the ciabatta, add a layer of the pickled salad, then top with sliced pork.
10
Drizzle the apple glaze over the pork, add the top half of the ciabatta, and serve.
