Honey Almond Granola with Mixed Berries & Vanilla Yogurt recipe

This is a yummy breakfast with crunchy almonds and sweet berries. You mix oats, nuts, and honey, then bake it. Put it on top of creamy yogurt with berries. It's a good way to start your day!

Ingredients

1 cup quick-cooking oats
1/2 cup sliced almonds
1/4 cup honey
1/4 cup coconut oil
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup dried mixed berries
2 cups vanilla Greek yogurt
1/4 teaspoon vanilla extract

Method

Preheat your oven to 400°F (205°C).

In a large bowl, mix 1 cup of oats with 1/2 cup of sliced almonds.

In a small saucepan, melt 1/4 cup of coconut oil over medium heat. Turn off the heat and stir in 1/4 cup of honey, 1/2 teaspoon of cinnamon, 1/4 teaspoon of salt, and 1/4 teaspoon of vanilla extract.

Pour the honey mixture over the oats and almonds, and stir until they are well coated.

Spread the mixture onto a baking sheet lined with parchment paper.

Bake in the preheated oven for 10 minutes, or until the granola is lightly golden. Make sure to stir the granola halfway through baking.

Remove the granola from the oven and let it cool. It will become crunchier as it cools.

Once cool, stir in 1/2 cup of dried mixed berries.

To serve, spoon 1/2 cup of vanilla Greek yogurt into each bowl and top with the homemade granola and extra berries if you like.
