This is a yummy red sauce made from tomatoes. You can dip your fries in it or put it on a burger. It's sweet, tangy, and a little bit spicy. You make it by cooking tomatoes and some other tasty things together.

Ingredients

1.5 kg ripe tomatoes, chopped
1 medium onion, chopped
2 garlic cloves, minced
2 tbsp brown sugar
120 ml apple cider vinegar
1/2 tsp smoked paprika
1/2 tsp ground mustard
1/4 tsp ground black pepper
1/4 tsp ground allspice
1/4 tsp ground cinnamon
1/8 tsp ground cloves
1 tbsp cornstarch
2 tbsp water
1 tsp sea salt

Method

Combine tomatoes, onion, and garlic in a large saucepan. Cook over medium heat for 10 minutes, until the vegetables are soft.

Add brown sugar, apple cider vinegar, smoked paprika, ground mustard, black pepper, allspice, cinnamon, and cloves to the saucepan. Stir well.

Simmer the mixture on low heat for 30 minutes, stirring occasionally.

In a small bowl, mix cornstarch with 2 tablespoons of water to create a slurry.

Pour the slurry into the saucepan and stir well. Continue to simmer for another 5 minutes until the ketchup thickens.

Remove from heat and let the ketchup cool for a few minutes.

Blend the mixture using an immersion blender or transfer to a blender and puree until smooth.

Strain the ketchup through a fine-mesh sieve to remove any solids.

Stir in the sea salt and adjust seasoning if necessary.

Allow the ketchup to cool completely before transferring to a bottle or jar. Store in the refrigerator.
