Hoisin Chicken Stir-Fry with Rice Noodles and Vegetables recipe

This is a yummy dish with chicken, noodles, and veggies. It has a sweet and salty sauce. You cook the chicken with ginger, garlic, and veggies. Then mix with noodles and sauce. It's fun to eat and tastes so good!

Ingredients

9 oz rice noodles
1 lb chicken breast, boneless and skinless
1 tbsp garlic, minced
1 tbsp ginger, minced
3 sticks celery, thinly sliced
1 medium carrot, julienned
9 oz broccoli florets
4 tbsp hoisin sauce
2 tbsp soy sauce
1 tbsp honey
1/4 cup water
2 tbsp vegetable oil
1/2 tsp black pepper
1/4 cup roasted peanuts, chopped (optional)

Method

Fill a large pot with water and bring to a boil. Cook rice noodles according to package instructions, then drain and set aside.

Cut the chicken into 1/2-inch strips and set aside.

In a bowl, mix hoisin sauce, soy sauce, honey, and water to make the stir-fry sauce.

Heat vegetable oil in a large skillet over medium-high heat. Add minced garlic and ginger, and sauté for 1 minute until fragrant.

Add the chicken strips to the skillet and sprinkle with black pepper. Cook for about 5-6 minutes until the chicken is browned and cooked through.

Add the sliced celery, julienned carrot, and broccoli florets to the skillet with the chicken. Stir-fry for another 3-4 minutes until the vegetables are tender but still crisp.

Pour the stir-fry sauce over the chicken and vegetables, and cook for another 2 minutes, stirring well to coat everything in the sauce.

Add the cooked rice noodles to the skillet and toss everything together until the noodles are heated through and coated with the sauce.

Serve the stir-fry hot, garnished with chopped roasted peanuts if desired.
