Herbed Yogurt Flatbreads with Spicy Sausage and Fried Eggs recipe

This is a yummy bread with eggs and spicy sausage on top. You make the bread with yogurt and flour. Then you cook sausage and eggs in a pan. Put the eggs and sausage on the bread and eat!

Ingredients

300 g full-fat Greek yogurt
250 g self-raising flour
1 tsp salt
1 tbsp fresh parsley, chopped
1 tbsp fresh chives, chopped
120 g spicy Italian sausage
4 large eggs
2 tbsp olive oil
1 (30 g) bunch of chives, chopped for garnish
1 (50 g) jar of pickled jalapeños

In a bowl, combine 300 g of yogurt, 250 g of flour, 1 tsp of salt, 1 tbsp of chopped parsley, and 1 tbsp of chopped chives to form a dough. Knead on a floured surface until smooth. Cover with an inverted bowl and let rest for 10 minutes.

Divide the dough into 4 equal parts and roll each into a circle. Heat a frying pan over medium heat and brush each flatbread with olive oil.

Cook each flatbread for about 1-2 minutes on each side until golden and slightly puffed. Wrap the cooked flatbreads in a clean towel to keep warm.

Remove the casing from the sausage and crumble it into the same pan. Cook until browned and crispy, then remove and set aside.

In the same pan, crack the eggs and fry until the edges are crispy and the yolks are cooked to your preference.

Place each flatbread on a plate, top with a fried egg, sprinkle with crispy sausage, and garnish with chopped chives. Add pickled jalapeños to taste.
